Peel and sketch charcoal pencil with kneadable eraser. Great if you don't like getting messy! Also, does not require a sharpener.

Newsprint Pad for fast "not precious" field sketching.

If you've already got acrylic paints, you're good to go! If you need some, these work great.

Use whatever substrate you like! I like to use canvas panels because they lay flat and are stackable (I paint a LOT.) I'm using 9x12 because it's easier to finish a painting in a 2-hour zoom call, but mainly because it fits easily in my camera view when teaching on Zoom! 
If you want to go big, go BIG! Use whatever you like.
